Dumrot Halwa (White Pumpkin Halwa)

INGREDIENTS:
White Pumpkin grated- 2 cups
Sugar - 1 cup
Raisin - 1tbs
Cashew - 1 tbs
Ghee - 4 tbs
Cardamom powder - 1/2 tbs
Colouring - Saffron - pinch
METHOD:
Heat pan & add 1/2 tbs of ghee on medium heat, when it is hot add cashews fry it until it become light brown & then add raisins. Let it puff up like little golden balloons & keep aside
Remove the skin & seeds from pumpkin & grate it.
Squeeze all the water from the pumpkin.
Take a pan, turn on the heat, once it is hot add the grated pumpkin & fry until the water evaporates from it & then add sugar & let it cook until the sugar is mixed properly & pumpkin is well cooked.

Add the balance ghee to it & then add Cardamom powder , fried cashews & raisins to it & let it cook for 5 mins then turn off the heat.
Serve it has a dessert in lunch or dinner.
